A special occasion isn’t required to enjoy the new nightly dinner menu at the Omni Colonnade’s restaurant, Bolo’s Rotisserie Grille. Chef Sam Boisjoly and team have created an exciting menu featuring dishes from across Latin America, using only the freshest ingredients with everything made in house.

Menu highlights include appetizers such as a trio of Mexican street tacos; queso fundido made with asadero cheese, kielbasa country sausage, rustic corn tortillas; and Ensalada de Bistek, a grilled skirt steak with Texas greens, roasted peppers, tomato, wildflower honey and ancho chile vinaigrette.

Flavorful entrees include a variety of steaks (Filet Mignon, Ribeye, and Flat Iron Steak), seafood (whole fried snapper and Pacific White Sea Bass served with Spanish white beans, sautéed asparagus, and chimichurri), and a variety of tortas including Cubano (slow roasted pork, honey cured ham, whole grain mustard, pickles, Swiss cheese) and Choripan (chorizo, fire roasted pepper aioli, chimichurri, French baguette). The entrees wouldn’t be complete without Texas Fried Steak and your choice of chicken, shrimp, or vegetable Fajitas.

Be sure to save room for dessert – perhaps the roasted peach and Texas pecan cobbler served with vanilla bean ice cream or a Latin American favorite, Membrillo con Panela made with guava jelly, panela cheese, buñuelos, and herradura caramel sauce.
